We cooked sesame tofu (goma dofu) today. It is one of typical vegetarian diet (shojin-ryori).
You can find them in supermakets but almost all of them includes alternative ingredients and/or artificial food additives. In our class, we made sesame tofu only with sesame seeds and arrowroot starch (kudzu 葛粉), which is the traditional/original recipe for shojin-ryori.
The original recipe gave us rich aroma of sesame and smooth/melting taste which you cannot find in ones sold in supermarkets.
