We made Mizutaki or Chicken hot pot, which is a local one-pot dish popular in Fukuoka prefecture (Fukuoka is located at the north part of the south-west island called Kyushu).
It is said that Mizutaki is originally cooked from water without any seasoning in order to make the most of stock from chicken, thus it is called "mizutaki" (stewed with water).
We prepared dipping sauce as a mixture of "ponzu" or soy source with citrus flavor and "momiji orishi" or grated radish and red pepper used as spice.
To finish off the meal, we put Udon noodle in the rich, chicken flavored soup. It was so delicious !!
